Let me introduce myself. My name is Leigh Mikkelsen. I grew up in New Zealand before spending 7 years in England pursuing my passion for horses. Upon returning to New Zealand in 1997, I farmed beef and sheep just outside Cambridge, New Zealand. In 2015 I moved into Cambridge town with my three children, and from there my journey into nutrition started.
After some fortuitous conversations with trainers locally, I picked up a book about carbohydrate appropriate nutrition and the rest is history as they say. My thirst for knowledge and passion for health led me to the Holistic Performance Institute. There I studied and qualified as a Nutrition Coach. I am still furthering my education.
I am trained in Carbohydrate Appropriate Nutrition, structured around the Ketogenic dietary guidelines. My qualification is NZQA accredited at level 6, and my knowledge is evidence based and robust.
